chilled avocado soup

A delicious treat that you can blend and serve in minutes.

Serves

4 people

2 ripe Hass avocados
1 1/2 cups reduced-fat buttermilk and
1 1/2 cups chicken or vegetable broth
1 seeded jalapeƱo pepper

1/4 cup fresh cilantro leaves
1 tsp ground cumin
1/2 tsp salt

Instructions

In a food processor or blender, process the above ingredients until smooth. Serve in chilled bowls with hot-pepper sauce, if desired.
